Abstract

The bean Phaseolus vulgaris L., is one of the 11 species that feed the world. It is used as a basic food supplying proteins, calories, vitamins and mineral salts. Its production covers the 5 continents, with America and Africa being the largest producers and consumers. It constitutes the most widely used grain legume in Venezuela, representing one of the traditional foods in the Venezuelan diet and is the main source of vegetable protein. They adapt to a wide range of altitudinal floors, and their production cost is low compared to vegetables. In the country, the preference for black beans is associated with sociocultural aspects of the population, regardless of economic level.
