Non-traditional fruit trees: Agro-industrial use of tamarind
Abstract
Tamarind, Tamarindus indica, L., is a tree belonging to the legume family, native to East Africa and India, 10 to 25 meters high, whose fruit is a flattened brown pod, straight on the back and wavy on the ventral side, it has fleshy pulp with a sweet-sour flavor. It is a source of vitamins and minerals that are used in the production of condiments, medicinal products, jellies, compotes, jams, soft drinks and fermented drinks (Avilan et al., 1992).
